This is not just any sandwich- it&#8217;s elegant and has some serious flavor. I&#8217;m going to rock your lunch today, gourmet style.<\/p>\n<p>It started with &#8216;Truffled Honey &amp; Lemon Chevre Spread&#8217; made by <a href=\"http:\/\/www.avalanchecheese.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Avalanche Cheese Company<\/a>. This cheese changed my world a little bit. Kudos to Wendy Mitchell for her thoughtful touch when it comes to cheese-making. &#8216;Truffled Honey &amp; Lemon Chevre Spread&#8217; truly has just a hint of white truffle, enough to leave you wanting more. The lemony tang combined with subtle honey flavor is perfectly balanced. There is something special about Wendy&#8217;s cheese. It&#8217;s the first time I&#8217;ve tasted a Colorado cheese that has worldly sophistication. I believe her cheeses are special because Wendy understands the art of being subtle. It&#8217;s all very Euro, isn&#8217;t it?<\/p>\n<p>When I first tried &#8216;Truffled Honey &amp; Lemon Chevre Spread&#8217; my mind began to spin with ideas, eventually settling on a sandwich. Does it seem demeaning to put such a lovely cheese on the lowly sandwich? I thought of how it would feel to step outside for a lunch break, unwrap a simple sandwich, and bite into it. The doldrums of the day would melt away as I tasted seductive truffle then felt the delight of lemon and honey. What to put on this very special sandwich? The flavor of beautifully pink roast beef called to me. The sweetness of caramelized shallots would harmonize with both the cheese and beef, adding complexity and crispy texture. Multicolored salad greens from the farmer&#8217;s market add sophistication and elegance. And so the &#8220;Truffled Goat Cheese &amp; Roast Beef Sandwich&#8221; was born. If you don&#8217;t make this sandwich, I hope it at least inspires you to add something special to your next packed lunch. It&#8217;s small pleasures that help us get through the day, you know.<br \/>\n<\/br><\/p>\n<h4>Truffled Goat Cheese &amp; Roast Beef Sandwich<\/h4>\n<p><em>makes two sandwiches<br \/>\n<\/em><\/p>\n<p style=\"padding-left: 30px;\">1 demi baguette<br \/>\n&#8216;Truffled Honey &amp; Lemon Chevre Spread&#8217; from Avalanche Cheese Company**<br \/>\n2 shallots, sliced into thin rounds<br \/>\nolive oil<br \/>\n12 slices peppered roast beef<br \/>\nspring salad greens, a nice handful<\/p>\n<p><\/br>Heat a splash of olive oil in a skillet over medium heat. Add shallots and cook for a few minutes until brown and caramelized. Keep an eye on your heat because they can burn quickly. While the shallots cook, cut the ends off the baguette and cut in half vertically to make two sandwiches. Slice each in half horizontally. Don&#8217;t cut yourself with the serrated knife. Spread the goat cheese on the bread. Lay slices of roast beef on the bread and sprinkle on the crispy shallots. Top with spring salad greens and the other piece of baguette. Serve with your favorite potato chips. The ones in the picture are Salt &amp; Pepper.<\/p>\n<p>This sandwich might be nice with a drizzle of olive oil or some balsamic vinegar, just be careful not to overshadow the subtle flavors of the cheese.\u00a0 Remember what Coco Chanel said about always taking off one accessory before leaving the house.
