Unsalted butter sprinkled with fleur de sel and slathered on a  peppery red radish has become the very symbol of spring.<\/p>\n<h5 style=\"padding-left: 30px;\">2.\u00a0 Sandwich<\/h5>\n<p style=\"padding-left: 60px;\">Butter and ham are a match made in heaven: salty porkiness and creamy  sweetness united.\u00a0 Buttered baguette with ham is great for a spring  picnic lunch.<\/p>\n<h5 style=\"padding-left: 30px;\">3.\u00a0 Croutons<\/h5>\n<p style=\"padding-left: 60px;\">Need to use up stale bread? Make buttered croutons. Cube the bread  and pour melted butter over it, then heat in a 350 degrees farenheit  oven for a few minutes. I like the idea of a spring salad, heavy on the  croutons. Toss herbed goat cheese with the croutons, roast beets, spring  salad greens, and toasted hazelnuts.<\/p>\n<h5 style=\"padding-left: 30px;\">4.\u00a0 Compound butter &amp; spring veg<\/h5>\n<p style=\"padding-left: 60px;\">Best used in a recipe with simple, fresh flavors, compound butters  are perfect for delicate spring vegetables. Try spring peas and baby  spinach topped with a garlic and chopped fresh herb butter. The salty,  complex flavor of anchovy butter would be a great partner to broccoli.  Maybe an orange zest and shallot compound butter for asparagus. How  about making a honey-ginger butter for steamed carrots?<\/p>\n<h5 style=\"padding-left: 30px;\">5. Compound butter &amp; meat or fish<\/h5>\n<p style=\"padding-left: 60px;\">I think of compound butter in regards to a meat\/fish dish as the lazy cook&#8217;s answer for a sauce. For grilled lamb shoulder chop you could use a Herbs de Provence compound butter. A dollop of lemon-thyme butter would be lovely atop roasted fish.\u00a0 Grilled steak and black peppercorn butter are a good pair. Use your imagination, there are so many possibilities.<\/p>\n<h5 style=\"padding-left: 30px;\">6.\u00a0 Sauces<\/h5>\n<p style=\"padding-left: 60px;\">Poached fish is a perfect dish for spring. I serve it with <a href=\"http:\/\/www.epicurious.com\/video\/technique-videos\/technique-videos-sauces-and-stocks\/1915458784\/sauces-and-stocks-how-to-make-beurre-blanc\/1915433362\" target=\"_blank\" rel=\"noopener noreferrer\">beurre blanc<\/a>, a rich butter sauce. In <a href=\"http:\/\/www.chezpanisse.com\/store\/books\/\" target=\"_blank\" rel=\"noopener noreferrer\">The Art of Simple Cooking<\/a>, Alice Waters shares a recipe for b\u00e9arnaise, a buttery sauce flavored with shallot and tarragon.\u00a0 She pairs it with grilled steak or roast beef. Any time you saut\u00e9 meat in a pan, you have the opportunity to make a pan sauce enriched by whisking in butter. It&#8217;s worth the seconds of extra effort.<\/p>\n<h5 style=\"padding-left: 30px;\">7.\u00a0 P\u00e2te Bris\u00e9e<\/h5>\n<p style=\"padding-left: 60px;\">A fancy word for pie crust,<a href=\"http:\/\/www.marthastewart.com\/254603\/pate-brisee-pie-dough\" target=\"_blank\" rel=\"noopener noreferrer\"> p\u00e2te bris\u00e9e <\/a>is a dough made from flour, water, and butter. P\u00e2te Bris\u00e9e dough can be used for making fruit pies or galettes. Spring is the perfect time for a strawberry-rhubarb pie.<\/p>\n<h5 style=\"padding-left: 30px;\">8.\u00a0 P\u00e2te Sucr\u00e9e<\/h5>\n<p style=\"padding-left: 60px;\">Similar to p\u00e2te bris\u00e9e,<a href=\"http:\/\/www.marthastewart.com\/282715\/pate-sucree\" target=\"_blank\" rel=\"noopener noreferrer\"> p\u00e2te sucr\u00e9e<\/a> calls for more sugar and therefore has a more sturdy crust that is easy to press into a tart pan with a removable bottom. Tarts are great for spring entertaining. Citrus is still in season, so why not make a lemon tart? The &#8220;Panna Cotta Tart&#8221; from <a href=\"http:\/\/shop.marthastewart.com\/Martha-Stewarts-Cooking-School-Lessons-and\/A\/0307396444.htm\" target=\"_blank\" rel=\"noopener noreferrer\">Martha Stewart&#8217;s Cooking School<\/a> would be lovely as well.<\/p>\n<h5 style=\"padding-left: 30px;\">9.\u00a0 Cookies<\/h5>\n<p style=\"padding-left: 60px;\">I love a shortbread cookie with my tea.\u00a0 All you need to make a shortbread cookie is butter, flour, sugar, and salt. So simple! For spring time you could brighten the flavor with a bit of lemon zest or lavender flowers.<\/p>\n<h5 style=\"padding-left: 30px;\">10.\u00a0 Biscuits<\/h5>\n<p style=\"padding-left: 60px;\">What is better than a rich and flaky biscuit hot out of the oven? Butter is the reason for the flakiness and the flavor.
