Each week I contribute an article to “Whole Foods Market Cooking Boulder” website and this week I shared a recipe called Beet Lasagna for One, which appeared on la Domestique last summer. After all the marathon cooking associated with Thanksgiving I’m thinking an easy, comforting, single-serve lasagna is just what we all need. I enjoy beets for their color and personality in this dish, but any tasty leftover veg will do. Leftover roast squash, pumpkin, mushrooms, or broccoli would all be good choices. Because the veg is already cooked, the lasagna only need be quickly assembled and baked about ten minutes until the cheese is melted and bubbling. It’s the perfect antidote to the back to work blues. My family never wants lasagna when I bring it up as a meal option. I haven’t had it in ages and I love lasagna. I might have to insist on making my own or putting together your suggestion…”for one”!
